Colombian Patacones (Tostones)


Colombian Tostones (or Patacones)are made using very green plantain (not bananas). These are peeled, cut into slices, flattened, and fried twice until golden brown. This is our family favorite at breakfast. A tostonera is a




tool used to smash the fried platain slices and form the Patacones or Tostones, but if you don't have one available you can use a small flat plate over a heat-resistant cutting board.


Ingredients: - 4 green plantains - Salt to taste - Oil for frying


Preparation: 1. Peel the plantains and cut into 1 to 1½-inch sections. 2. Fry the plantains in hot oil until light golden ( Use a fryer or frying pan with enough oil to fully cover the plan

antain using a slotted spoon and place on a plate lined with paper towels, allow the fried plantain slices to cool a bit. 4. Place the fried plantain slices in between two small cutting boards sprinkled with salt or use a tostonera to flatten the slices to about ½ in in depth. (if you flatten thinner that the ½ inch, you will get a crispier patacon). 5. Place the patacones back in the frying pan and cook for about 3-4 minutes to a golden brown. 6. Serve while still hot. You want to make only the portions that you are going to consume, as patacones are best consumed while fresh and hot. Leftovers do not reheat very well.
